Happily, this Apple Pie Baked Oatmeal is so easy to prepare, and it makes your whole house smell *amazing*! It is delicious served warm or cold, and it is a great way to prep breakfast for the week ahead.

What Is Baked Oatmeal?

Baked oatmeal is a breakfast casserole that is made from oats, milk, and various toppings or seasonings. When baked in the oven, the texture becomes similar to that of an oatmeal bar, so it feels like you are eating an oatmeal cookie for breakfast. YES PLEASE. Additionally, with the thicker texture, this Apple Pie Baked Oatmeal makes for a convenient “grab and go” breakfast when you want something filling to start your day and don’t have time to sit down to eat a bowl of oatmeal. It’s also a great midday snack!

  • Brown sugar
  • Salt
  • Baking powder
  • Apple pie spice
  • Unsweetened vanilla almond milk
  • Unsweetened apple sauce
  • Egg
  • Vanilla extract
  • Apples
  • Cooking spray

How To Make Apple Pie Baked Oatmeal

First, preheat your oven to 350 degrees and spray an 8×8 baking dish with cooking spray. In a bowl, combine the oats, brown sugar, salt, baking powder, and apple pie spice. In another bowl, whisk together the almond milk, apple sauce, egg, and vanilla extract. Next, add the wet mixture to the dry mixture and stir until combined. Then, fold the apples into the mixture until well combined. Finally, pour into the baking dish and bake for 45-50 minutes until it is golden brown and set in the middle. Let it cool for a few minutes and cut into six servings.

Storing And Freezing Instructions

If you are making this baked oatmeal for breakfast for the week ahead, simply pop the baking dish in the fridge for the week. Alternatively, if you prefer to freeze it, I would recommend freezing it in individual portions wrapped in plastic wrap or aluminum foil. Then, night before you want to eat it, you can put your serving in the fridge to thaw overnight. In the morning, you can microwave it for about 40-50 seconds, or you can even pop it in the oven. SO GOOD.

  3. I can’t use almond milk due to food allergies in the house. Almonds, oranges and bell peppers are verboten! What can I substitute?
