This Balsamic Watermelon Salad is my all time favorite summer salad. It’s light and refreshing, and the combination of flavors is something to swoon over. Watermelon, fresh basil, red onion, and goat cheese all topped off with a drizzle of balsamic glaze… it just doesn’t get much better than that.
You can serve this dish as a meal itself, as a side dish alongside some grilled chicken or fish, or even as a fun summertime appetizer. Additionally, I love that you can change up the way you present it to keep things interesting. For example, I like to vary my presentation between smaller slices (as shown), one large slice, or cubes. You really can’t go wrong!
Variations To This Recipe
Happily, there are so many variations you can choose to make with this dish. Cantaloupe instead of watermelon? Go for it. Mint instead of basil? Absolutely. Feta cheese instead of goat cheese? Whatever floats your boat. As you can see, you can let your creativity run wild with this one! Have fun trying all kinds of flavor combinations!
