All About These Buffalo Chicken Meatballs

These Buffalo Chicken Meatballs incorporate all of the delicious flavors of a spicy chicken wing in the form of a meatball. They are a healthier version of everyone’s favorite game day snack, and they even sneak in some vegetables if you have picky eaters. They are so versatile and can be served as an appetizer, snack, or a main course! If you’re feeding a crowd, these can easily be prepared in advance to give you more time to enjoy with your guests.

 

 

What You’ll Need

Equipment

  • Large bowl
  • Knife
  • Cutting board
  • Baking sheet

 

Ingredients

  • Lean ground chicken
  • Eggs
  • Panko bread crumbs
  • Carrots
  • Celery
  • Your favorite wing sauce (I use Frank’s Red Hot Wings Buffalo Sauce)

 

 

How To Make These Buffalo Chicken Meatballs

First, preheat your oven to 350 degrees. In a large bowl, add the ground chicken, eggs, panko bread crumbs, carrots, celery, and wing sauce. Using clean hands, mix until combined, making sure not to overmix. Then, form into meatballs and arrange on a baking sheet. For reference, this recipe will make 24 larger sized meatballs or 48 smaller sized meatballs. Bake at 350 degrees for 25 minutes or until the chicken is cooked through. Toss or drizzle with wing sauce, or serve it on the side for dipping. Optionally, you can garnish with blue cheese crumbles.

 

 

Serving Suggestions

These Buffalo Chicken Meatballs are delicious served with carrot sticks, celery sticks, ranch dressing, or blue cheese dressing.

This recipe makes 24 larger sized meatballs or 48 smaller sized meatballs.

If you make the larger sized meatballs, they come out to 66 calories each. They are 1 WW Green SmartPoint® per meatball, and you can have up to five meatballs for 1 WW Blue or Purple SmartPoint®.

If you make the smaller sized meatballs, they come out to 33 calories each. They are 1 WW Green SmartPoint® per two meatballs, and you can have up to ten meatballs for 1 WW Blue or Purple SmartPoint®.
