All About This Slow Cooker Mississippi Chicken

This Slow Cooker Mississippi Chicken has the same delicious flavors as the classic Mississippi Pot Roast, with a lighted up spin on a chicken version! This is so good served alongside some Oven Roasted Brussels Sprouts and Crispy Oven Roasted Potatoes, or you can even use it to make a sandwich, wrap, or quesadilla. Yum!

Is This Dish Super Spicy?

I wouldn’t necessarily describe this dish as spicy. The banana peppers add a unique flavor profile, but I feel that a lot of the spiciness gets cooked out. If you are sensitive to spice, I would use mild banana peppers and omit the juice. If you are a spice lover, you can always opt for the hot banana peppers and use as much of them (plus the juice!) as you’d like.

How Would I Make The Classic Mississippi Pot Roast?

If you want to make the classic Mississippi Pot Roast, just lightened up, simply use pot roast instead of chicken and everything else would remain the same. Just make sure to calculate the points for the pot roast!

Ingredients

  • Boneless skinless chicken breasts
  • Onion
  • Au jus gravy mix (I use McCormick brand)
  • Ranch seasoning mix (I use Hidden Valley brand)
  • Banana peppers
  • Light butter

How To Make This Dish

Making this dish could not be any easier. You literally just put all of the ingredients in a slow cooker and cook on low for 8 hours or on high for 4 hours. Once the chicken is cooked through, you shred it with two forks and give it a good stir so it can absorb all of the remaining sauce.

  • 1 packet au jus gravy mix I used McCormick

  • 1/2 cup sliced banana peppers plus some of the juice from the jar if you like a little kick
  • 2 tablespoons light butter I used Land O Lakes

    I fixed this for dinner tonight and it was so good! It is going in our regular meal rotation. My husband, who is a total food snob and doesn’t like crockpot chicken, LOVED this and said we need to have this often.
