INGREDIENTS

Southwest Style Chicken Salad - Cooking With Fudge

  • Chicken: I use boneless skinless chicken breasts and cook them in the crockpot overnight; then in the morning I shred them to use as the base of this chicken salad. Alternatively, you could bake or poach some chicken breasts and dice them once they have cooled. In addition to chicken breasts, you can use chicken tenderloins or even rotisserie chicken from the deli section of your local grocery store.
  • Nonfat plain Greek yogurt: I use Fage 0%, but any type will do.
  • Light mayonnaise: My favorite brand is Hellman’s; you really don’t notice that it’s a lighter alternative!
  • Grape tomatoes: Feel free to use any type of tomato you have on hand! Cherry, roma, and beefsteak are also great options.
  • Red onion: While I like using red onion for an additional pop of color, any type of onion will do. If you don’t like raw onion, you can use onion powder instead.
  • Corn: Fresh, frozen, or canned all work fine! For additional flavor, consider using fire-roasted corn. I find mine in the frozen section at Whole Foods.
  • Black beans: Any type of canned bean can be used in this recipe; just make sure you drain and rinse them well. Pinto beans or kidney beans would be excellent options.
  • Lime: Using the juice and zest of a lime gives a nice fresh burst of flavor to this dish. If you don’t have any limes, you can use a lemon instead. 
  • Fresh cilantro: This is another ingredient that adds to the freshness factor. Dried cilantro works as an alternative as well. If you don’t like cilantro, you can omit entirely.
  • Seasonings: I use my homemade taco seasoning that I use for my Sheet Pan Chicken Fajitas and One Pan Steak Fajitas, which is a blend of chili powder, cumin, oregano, paprika, garlic powder, salt, and pepper. You can also use store-bought taco or fajita seasoning as well, or you can experiment on your own to see what you like the best!
  • Optional: If you want some added heat, you could add some canned diced chilies or chopped fresh jalapeno peppers.

INSTRUCTIONS

  • Shred or dice the chicken.
  • Using a knife and a cutting board, quarter the grape tomatoes and dice the red onion. Juice and zest the lime. Chop the fresh cilantro.

  • In a large mixing bowl, combine the ingredients well and store in the refrigerator to chill until ready to serve.

  • Swapping out the chicken breast for another type of protein that you prefer, such as turkey breast or pork loin
