Cilantro Lime Rice

Ingredients

  • Avocado oil spray or any cooking spray of your choice
  • 1/2 cup white onion finely diced
  • 2 cloves garlic minced
  • 1 cup rice I usually use brown rice or long grain white rice
  • 2 cups water chicken stock, or vegetable stock
  • 1 lime juiced and zested
  • 3/4 cup fresh cilantro chopped
  • 1 teaspoon salt

Instructions

  • Rinse the rice with cool water until the water runs clear. Rinsing the rice removes any excess starch, which prevents the rice from getting too gummy or sticky while it cooks.
  • In a medium sauce pan over medium heat, saute the onion in avocado oil spray for a few minutes until soft and translucent.
  • Add the garlic and saute for another minute.
  • Add the rice and stir for a couple more minutes until it gets a slightly brown and toasty.
  • Add the water, chicken stock, or vegetable stock and raise the heat to high until the rice comes up to a boil. (Note: While water is totally fine to use for this step, using chicken stock or vegetable stock adds more flavor to the rice.)
  • Once the rice has reached a boil, cover and reduce the heat to low. Allow the rice to cook according to the package directions. This usually ranges anywhere from 20 to 45 minutes depending on the type of rice you use.
  • Once the rice is done cooking, remove the sauce pan from the heat, making sure to keep it covered. This step allows the rice to steam, which makes it nice and fluffy.
  • After the rice has steamed for 10 minutes, fluff it with a fork. Add the lime juice, lime zest, cilantro, and salt and stir until well combined.

Notes

This Cilantro Lime Rice makes six servings at 1/2 cup each.
