Apple Pie Baked Oatmeal

This Apple Pie Baked Oatmeal is easy to make, and it is a great way to prep breakfast for the week ahead. Served warm or cold, the comforting flavors of apple, cinnamon, and nutmeg are sure to make you reminisce about everything you love about fall!

Ingredients

  • 2 cups Quaker old fashioned oats
  • 1/8 cup brown sugar
  • 1/4 teaspoon salt
  • 1 teaspoon baking powder
  • 2 teaspoons apple pie spice
  • 1-1/2 cup unsweetened vanilla almond milk
  • 1/2 cup unsweetened apple sauce
  • 1 egg
  • 2 teaspoons vanilla extract
  • 3 apples diced
  • Cooking spray

Instructions

  • Preheat your oven to 350 degrees and spray an 8x8 baking dish with cooking spray.
  • In a bowl, combine the oats, brown sugar, salt, baking powder, and apple pie spice.
  • In another bowl, whisk together the almond milk, apple sauce, egg, and vanilla extract.
  • Add the wet mixture to the dry mixture and stir until combined.
  • Fold the apples into the mixture until well combined.
  • Pour into the baking dish and bake for 45-50 minutes until it is golden brown and set in the middle.
  • Let it cool for a few minutes and cut into six servings.
