Crispy Oven Roasted Potatoes

If you were to ask me for one of my family's favorite side dishes, this would be it. First of all, what's not to love about potatoes? Secondly, these potatoes are so simple, yet they get so deliciously crispy in the oven that you can't help but go back for more!

Ingredients

  • 1 1/2 pounds potatoes (I usually use baby red or yellow potatoes)
  • Avocado oil spray or any cooking spray of your choice
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  • Preheat your oven to 425 degrees.
  • Cut the potatoes into bite-sized pieces and toss with avocado oil spray, salt, and pepper.
  • Spread the potatoes out on a baking sheet and bake 25 minutes, then turn on the broiler for an additional 2-3 minutes to get them a little extra crispy.
