Peach Cobbler Baked Oatmeal

2 cups Quaker old fashioned oats 1/8 cup brown sugar 1/4 teaspoon salt 1 teaspoon baking powder 2 teaspoons cinnamon 2 teaspoons nutmeg 1-1/2 cup unsweetened vanilla almond milk 1/2 cup unsweetened apple sauce 1 egg 2 teaspoons vanilla extract 3 peaches diced Cooking spray
Preheat your oven to 350 degrees and spray an 8x8 baking dish with cooking spray.
In a bowl, combine the oats, brown sugar, salt, baking powder, cinnamon, and nutmeg.
In another bowl, whisk together the almond milk, apple sauce, egg, and vanilla extract.
Add the wet mixture to the dry mixture and stir until combined.
Fold the peaches into the mixture until well combined.
Pour into the baking dish and bake for 45-50 minutes until it is golden brown and set in the middle.
Let it cool for a few minutes and cut into six servings.
