Buffalo Chicken Meatballs
These Buffalo Chicken Meatballs incorporate all of the delicious flavors of a spicy chicken wing in the form of a meatball. They are a healthier version of everyone’s favorite game day snack, and they even sneak in some vegetables if you have picky eaters. These can be served as a snack, appetizer, or main course!
Servings 24 meatballs
- 2 pounds lean ground chicken
- 2 eggs
- 1/2 cup panko bread crumbs
- 1/2 cup carrots finely diced
- 1/2 cup celery finely diced
- 2 tablespoons wing sauce
- 1 cup wing sauce for serving
Preheat your oven to 350 degrees.
In a large bowl, add the ground chicken, eggs, panko bread crumbs, carrots, celery, and wing sauce.
Using clean hands, mix until combined, making sure not to overmix.
Form into meatballs and arrange on a baking sheet. For reference, this recipe will make 24 larger sized meatballs or 48 smaller sized meatballs.
Bake at 350 degrees for 25 minutes or until the chicken is cooked through.
Toss or drizzle with wing sauce, or serve it on the side for dipping. Optionally, you can garnish with blue cheese crumbles.
