Ingredients
2.5poundspotatoes
1tablespoonsaltplus more to season the potatoes after cooking
1/2tablespoonblack pepper

1/2cupunsweetened almond milk
4ounceslight sour cream
Instructions
Scrub the potatoes clean and peel if desired.
Cut into similarly sized chunks so they cook uniformly.
Add the potatoes to a large stockpot and fill it with cold water to about an inch or two past the height of the potatoes. Generously salt the water.
Bring the water to a boil and boil the potatoes for about 15-20 minutes until they are fork tender.
Strain the potatoes in a colander or strainer and return to the stockpot.
Add unsweetened almond milk and light sour cream and mash with a potato masher, meat chopper, or hand mixer until they're to your desired consistency.
Season with salt, pepper, and minced garlic or garlic powder.
Stir to combine.
