Shaved Brussels Sprouts With Pine Nuts And Cranberries
I am a huge fan of Brussels sprouts in any form or fashion. While my all-time favorite way to enjoy them is by roasting them in the oven, my close second favorite is to saute them with pine nuts and cranberries.

avocado oil sprayor any cooking spray of your choice
1poundbrussels sprouts
1/8cuppine nuts
1/4cupreduced sugar dried cranberries
1/2teaspoonsalt
1/4teaspoonblack pepper
1/4teaspoongarlic powder
1/4teaspoonred pepper flakesoptional
Instructions
If you are not purchasing pre-shaved brussels sprouts, use a mandolin slicer or knife and cutting board to thinly slice the brussels sprouts.
Spray a frying pan with avocado oil spray and saute the brussels sprouts over medium heat for about 5-7 minutes until they start to soften.
Add the pine nuts and dried cranberries and saute for another 2-3 minutes.
Season with salt, black pepper, garlic powder, and red pepper flakes if desired.
Remove from heat and serve warm.
