Shaved Brussels Sprouts With Pine Nuts And Cranberries

I am a huge fan of Brussels sprouts in any form or fashion. While my all-time favorite way to enjoy them is by roasting them in the oven, my close second favorite is to saute them with pine nuts and cranberries.

  • Mandolin slicer (optional)
  • Knife and cutting board (optional)
  • Frying pan
  • Spoon


  • avocado oil spray or any cooking spray of your choice
  • 1 pound brussels sprouts
  • 1/8 cup pine nuts
  • 1/4 cup reduced sugar dried cranberries
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon red pepper flakes optional


  • If you are not purchasing pre-shaved brussels sprouts, use a mandolin slicer or knife and cutting board to thinly slice the brussels sprouts.
  • Spray a frying pan with avocado oil spray and saute the brussels sprouts over medium heat for about 5-7 minutes until they start to soften.
  • Add the pine nuts and dried cranberries and saute for another 2-3 minutes.
  • Season with salt, black pepper, garlic powder, and red pepper flakes if desired.
  • Remove from heat and serve warm.
