All About This Peach Cobbler Baked Oatmeal

There is nothing better than a ripe, juicy peach. Well, okay, there is one thing… and that’s Peach Cobbler! It’s so good that I could eat it for breakfast, and that’s what this recipe essentially allows you to do! Happily, this Peach Cobbler Baked Oatmeal is so easy to prepare, and it makes your whole house smell *amazing*! It is delicious served warm or cold, and it is a great way to prep breakfast for the week ahead.

What Is Baked Oatmeal?

Baked oatmeal is a breakfast casserole that is made from oats, milk, and various toppings or seasonings. When baked in the oven, the texture becomes similar to that of an oatmeal bar, so it feels like you are eating an oatmeal cookie for breakfast. YES PLEASE. Additionally, with the thicker texture, this Peach Cobbler Baked Oatmeal makes for a convenient “grab and go” breakfast when you want something filling to start your day and don’t have time to sit down to eat a bowl of oatmeal. It’s also a great midday snack!

The Key Flavors

The main flavors that are highlighted in this dish are peach (of course!), cinnamon, and nutmeg. It is sure to make you reminisce about everything you love about fall! In fact, it’s like eating a helping of peach cobbler for breakfast!

What You’ll Need

Equipment

  • Two medium-sized bowls
  • Spoon
  • Whisk
  • 8 x 8 baking dish
  • Knife and/or spatula

Ingredients

  • Old fashioned oats (I use Quaker brand)
  • Brown sugar
  • Salt
  • Baking powder
  • Cinnamon
  • Nutmeg
  • Unsweetened vanilla almond milk
  • Unsweetened apple sauce
  • Egg
  • Vanilla extract
  • Peaches
  • Cooking spray

How To Make Peach Cobbler Baked Oatmeal

First, preheat your oven to 350 degrees and spray an 8×8 baking dish with cooking spray. In a bowl, combine the oats, brown sugar, salt, baking powder, cinnamon, and nutmeg. In another bowl, whisk together the almond milk, apple sauce, egg, and vanilla extract. Next, add the wet mixture to the dry mixture and stir until combined. Then, fold the peaches into the mixture until well combined. Finally, pour into the baking dish and bake for 45-50 minutes until it is golden brown and set in the middle. Let it cool for a few minutes and cut into six servings.

Storing And Freezing Instructions

If you are making this baked oatmeal for breakfast for the week ahead, simply pop the baking dish in the fridge for the week. Alternatively, if you prefer to freeze it, I would recommend freezing it in individual portions wrapped in plastic wrap or aluminum foil. Then, night before you want to eat it, you can put your serving in the fridge to thaw overnight. In the morning, you can microwave it for about 40-50 seconds, or you can even pop it in the oven. SO GOOD.
