All About These Healthy Garlic Mashed Potatoes
If you are a fan of mashed potatoes and are hoping to find a recipe that is lightened up just a smidge, you are in the right place! These Healthy Garlic Mashed Potatoes are full of flavor, and they taste exactly like what you would find at your favorite steakhouse restaurant. By making a few simple swaps, you can still enjoy a hearty and delicious side dish with fewer calories and fat.
What Kind Of Potatoes Should I Use?
You really can use any type of potato in this recipe. While my personal favorite is a red potato, I’ve also used yellow and Russet potatoes with fantastic results every time.
Do I Need To Peel My Potatoes?
No, absolutely not! While you are certainly more than welcome to peel your potatoes for this recipe, it’s totally up to your personal preference! I enjoy leaving them unpeeled (just be sure to give them a good scrub!) because it adds more texture and visual appeal.
What You’ll Need
Equipment
- Vegetable peeler (optional)
- Knife
- Cutting board
- Large stock pot
- Colander or strainer
- Potato masher, meat chopper, or hand mixer
Ingredients
- Potatoes
- Salt
- Pepper
- Garlic or garlic powder
- Unsweetened almond milk
- Light sour cream
How To Make These Healthy Garlic Mashed Potatoes
First, give your potatoes a good scrub and peel them if you prefer. Next, cut them into chunks. I like to cut them into roughly the same size chunks so they all take the same amount of time to cook.
Then, add your potatoes to a large stockpot and fill it with cold water to about an inch or two past the height of your potatoes. Generously salt your water. You want it to taste like ocean water. Trust me on this… this will season your potatoes wonderfully! Don’t skip this step.
Next, bring the water to a boil and boil the potatoes for about 15-20 minutes until they are fork tender. If your potatoes are being stubborn and are not fork tender by this point, let them go for a couple more minutes and keep checking.
Once the potatoes are ready, strain in a colander or strainer and return to the stockpot. Add unsweetened almond milk and light sour cream and mash with a potato masher until they’re mashed to your liking, making them as smooth or chunky as your little heart desires. If you prefer more of a whipped consistency, I’d suggest using a hand mixer to get them nice and creamy.
Season with salt, pepper, minced garlic (or garlic powder!), give them another good stir, and you’re all set!
