I am a huge fan of Brussels sprouts in any form or fashion. While my all-time favorite way to enjoy them is by roasting them in the oven, my close second favorite way to make them is this way: Shaved Brussels Sprouts With Pine Nuts And Cranberries.
This side dish is delightfully simple, yet it combines savory and sweet to satisfy all of your taste buds. I also love that it is so versatile; you can make substitutions several different ways here, which I will outline next.
Variations To This Recipe
There are so many fun variations that you can do for this recipe. Here are a few:
- Instead of pine nuts, consider using slivered almonds, pumpkin seeds, or walnuts.
- Opt for another dried fruit besides cranberries. Dried cherries or raisins would be delicious!
- Top with a crumbled cheese like feta or goat cheese. Yum!

How To Make These Shaved Brussels Sprouts With Pine Nuts And Cranberries
In order to save time, I love buying shaved Brussels sprouts from the store. I find mine at Whole Foods or Trader Joe’s. If you are not using shaved Brussels sprouts, use a mandolin slicer (carefully!) or knife and cutting board to thinly slice the Brussels sprouts.
Spray a frying pan with avocado oil spray and saute the Brussels sprouts over medium heat for about 5-7 minutes until they start to soften. Add the pine nuts and dried cranberries and saute for another 2-3 minutes.
Season with salt, black pepper, garlic powder, and red pepper flakes if desired. Remove from heat and serve warm.
